Chef Robert Kraatz of the Flora-BamaYacht Club does not come from a hunting or fishing background yet he shares a similar mission as those who do. In this video we learn about how to cook bufflehead ducks! In my opinion one of the telltale signs that you’re dealing with a true Sportsman is that they utilize all that they harvest. Over the course of my career I have had the pleasure of working closely with various types of hunters. As an avid waterfowl hunter, I can truly say that the level of sportsmanship is second to none in the industry. With that being the case however there are a few birds that have the reputation of being not edible. Many of these birds happened to be those that I particularly enjoy hunting.

Diver ducks in general have long had the reputation of being “too gamey”. This based off the fact that they often eat crustaceans shrimp and small fish. While it is true that they do have a more gamy flavor than other species of ducks. It’s my experience that “too gamey” is simply code word for liver flavored. More often than not when we ask our hunters if they would like us to clean their birds they don’t care to keep the merganser or buffleheads. Chef Robert and I along with a local organization, Nuisance Group, are on a mission to turn this misconception on its head.
Diver ducks in general are no different than any other waterfowl species when it comes to proper preparation. The undesirable taste will be held in the skin in the fat.
